Pineapple Bread Pudding KLO Pineapple Bread Pudding

1 loaf French bread
3 beaten eggs
1 tablespoon cinnamon
1 cup crushed pineapple,do not drain
1/4 teaspoon salt
2 cups milk
1 teaspoon vanilla
1 cup sugar
1 cup raisins, optional, I didn't use
1/2 cup butter, melted
1/2 cup chopped pecans, optional, I used

Break bread into small pieces and place in a large glass bowl. Pour milk over the bread and let it soak 15-20 minutes. After soak time mash the bread to remove any lumps.

Add the rest of ingredients and mix well.

Pour into a buttered 8-9 inch square pan and bake for 45 minutes at 350° until set in the middle and lightly browned on top.

Delicious hot or cold and can be served with a topping of sweetened whipped cream, bourbon sauce or Grand Marnier.

I had some golden rolls, bought at Sam's, left from Easter dinner and I used them in place of the French bread and it is very good. Haven't tried any of the toppings yet, made it after breakfast and plan on warming for supper. Will make the whipped cream then. 20051114


Krispy Kreme Bread Pudding Leo Benson Krispy Kreme Bread Pudding

1 doz glazed doughnuts-pinched into bite-size chunks
2 beaten eggs
1 can condensed milk
Pinch salt
Cinnamon- ~ 1 tbsp
More milk- ~ 3/4 cup
Vanilla- ~ 1 tbsp

Mix in pan-- I used a 8X12 pyrex

Bake 30 min at 350. Cool in refrig.

Butter Sauce
½ Stick of butter
½ box of confectioner’s sugar
Rum flavoring- ~ 2 tsp
Melt together, pour over bread pudding  20051114




Easy Fruit Cobbler BoykinsOnTheRoad  Quick and easy Deserts

1 cup self-rising flour
1 cup milk
1 cup sugar
1 stick margarine
fruit of your choice (canned/drained or fresh)

Preheat oven to 350. Mix well flour, milk, sugar. Put stick of margarine in 9x13 dish and put in oven until melted. Remove dish and pour flour mixture gently into center of melted margarine. Gently place your fruit in dish until covered single layer (or more if you prefer more fruit). Bake at 350 until crust is golden brown.

Great warm with ice cream on top.


Corn Pudding  BoykinsOnTheRoad  Corn Pudding

1 ( 8 1/2 oz ) box Jiffy Corn Muffin mix
1 ( 16 oz ) can Whole Kernel Corn with juice
1 ( 16 oz ) can of Cream Corn
1 stick of melted butter or margarine
1 cup sour cream
2 eggs

Mix all ingredients until blended. Pour into baking dish. Bake uncovered at 350 for 45-50 minutes or until lightly browned.  20051029

1 can creamed corn

pour corn into small throw away alumunium pan. A bread shape works well

break 2 small or one large egg into the empty can

whip with a fork

add about 1 tbs each flour and sugar, salt, pepper to taste, some melted butter, whip again

fill the rest of the can with milk or cream

pour into the pan

whip again with fork

bake at 350 until brown on top and firm

1 cup self rising flour. 1 cup sugar, 1 cup milk and 1 stick butter or margarine,1 can of your favorite fruit or pie filling

after melting the margarine add your favorite topping and then add the flour sugar milk mixture, DO NOT STIR, bake at 375 degrees for about 55 minutes or until top is lightly browned.

This is a very easy cobbler to make and one of my favorites and great for pot lucks at rallies etc.   You can create any combination.   Such as peach pie filling with yellow cake mix, apple pie filling with spice cake mix or maybe even cherry pie filling with chocolate cake mix.

Ingredients:
2- cans pie filling (may use any flavor)
1 cake mix (any flavor)
1/2 cup butter (1 stick)
Optional: may add chopped nuts sprinkled on top

Heat oven to 350 degrees.   Spread pie filling in the bottom of 2 casserole dishes, sprayed with non stick spray.   Sprinkle dry cake mix over the top and drizzle with butter over cake mix.   Sprinkle with chopped nuts if desired and bake for 40-50 minutes or until golden brown and bubbly.

Easy Cobbler The Dunks Easy Cobbler

Melt 1 stick (cube, 1/2 cup) of margarine or butter and pour into an 8x11 glass dish.

Batter- (Mix Together)
1 cup flour
1 cup sugar
2 tsp. baking powder
3/4 cup milk
pinch of salt

Pour Batter over melted margarine and add 3 cups of sweetened fruit (Just pour fruit on top of batter).
Mix 1/2 cup sugar and 1 tsp cinnamon and sprinkle over top of fruit.
Bake 35 minutes in 350 degree oven or until crust is golden.

1 large can sliced peaches drained or 5 fresh peaches peeled and sliced
5 slices white bread, crusts trimmed
1 1/2 cups white sugar
2 Tablespoons all purpose flour
1 egg lightly beaten
1/2 cup margarine, melted
Preheat oven to 350, Butter 8x10 baking dish
Place Peaches in prepared dish. Cut each slice of bread into five fingers, and lay the fingers over the peaches. In a medium bowl, combine, flour, egg, and butter and mix until well blended. Pour over bread and peaches.
Bake in preheated oven 35 to 45 minutes until golden.

I have divided the peach juice with the sugar so not to use so much sugar, and added more bread slices. Try it and you can be the judge. It is very good and you wont know the crust is light bread.

Bisquick cobbler

1 stick (1/2 cup) butter
1 cup milk
1 cup self rising flour
1 cup sugar
1 (15-16 oz.) can peaches (Light or Regular syrup)

Melt butter in bottom of 9 inch cake pan (round or square). Mix flour and sugar; add milk and mix until smooth. Pour into pan with butter. Pour can of peaches on top of the batter (juice and all). Bake at 375 until golden brown and center is firm (40 - 45 minutes). When almost done I like to put some Sugar and Cinnamon on the top and finish cooking.

This will be the best peach cobbler you can make and so easy. Only mess up two pans.

Now you know that a scoop or two of Vanilla Ice cream would do just nicely on top of the hot Peach cobbler.

Pumpkin Bars Heathertee2002 Pumpkin Bars

These are so moist and good, and easy to make as well.

Set the oven at 350F and grease and lightly flour a 10x15" pan.

Mix together in the large bowl of your mixer:
1/3 cup sugar
1/3 cup vegetable oil
3 eggs
1 15-oz can pumpkin

Mix together in a plastic bag or a separate bowl til blended:
1 box Pillsbury moist Supreme butter cake mix
2 tsps cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp. nutmeg

Add the dry to the wet mixture and beat 2 minutes at moderately high speed.
Pour into the pan and bake 25 to 30 minutes. Cool before frosting.

Frost with cream cheese frosting:
8 oz. cream cheese at room temperature
1 stick butter, at room temp
3 3/4 cups confectioner's sugar
1 teasp. vanilla extract
Cream the butter and cheese together in a large bowl on low speed til blended, about 1/2 minute. Stop the machine. Add the sugar a little at a time, blending on low til incorporated. Add the vanilla and increase the speed to medium. Blend about a minute more or til smooth. Frost the cake and refrigerate til time to serve.

Curried Fruit PRT Curried Fruit

2 lg. cans each pineapple chunks, pear slices, peach slices
1 1/2 sticks butter - in slices
1 c. brown sugar
3 tbs. curry powder (less if you don't like curry)

Drain fruit completely - leave it in a colander and let it drain FOREVER.
Combine all ingredients, except butter, in large oven proof bowl.
Dot with butter.
Bake uncovered at 250° for 2 hours. Play with the oven temp and time if you are cooking other things.

Great with ham. Great reheated.

It's that time of the year and do you have apples to use up? Here is a simple recipe that I have made for years...
                  
8" or 9" 2 Crust Pie crust
6-7 Tart Apples (sliced thin)
1/2 Cup Sugar
1 Teaspoon Cinnamon

Prepare pastry, Roll out 1" larger then pizza pan, put pie crust on pizza pan and make an edge around pan like on pizza's. Peel apples and slice thin and mix with sugar and cinnamon mixture. Lay apples around pizza pan and sprinkle with topping.

 Topping:

   3/4 Cup Flour
   1/2 Cup sugar
   1/2 cup Firm Margarine (not a spread I use Nucoa)
   Mix with a pastry blender or two forks till crumbly. Sprinkle over apples.
   Bake *450 for 30-40 minutes or till lightly brown and apples are tender.

   Pastry recipes that I use.
    2 Cups Flour
    1 Cup Crisco
    1 Teaspoon salt
    Ice water (as much as you need to make pastry workable)

    With pastry blender or two forks mix flour, Crisco, and salt till crumbly. Add water mix till workable.

Apple Slices I'dratherbecamping It's Apple time ! My favorite Apple Crisp recipe

2 1/2 cups flour
1 teas. salt
1 heaping tbsp. sugar
1 cup shortening. Mix like crust, add 1 egg yolk and enough milk
to make 2/3 cup (egg yolk & milk in cup)

Divide crust for top and bottom

Mix and roll out to fit a large cookie sheet, add 2 hand fulls of cornflakes crushed on top of crust

Slice 8-10 apples over crust,
Mix 1 cup sugar,
1 teas cinnamon
2 heaping teas flour and sprinkle over apples.

Roll out 2nd crust and place on top.
Pinch edges firmly
Beat egg white til stiff and spread over top.

Bake 1 hour at 350 degrees

Frost while warm with powder sugar frosting

Powder sugar and Milk
Do not make frosting to runny so that is will set up when cooled.

Apple Betty ol'blue Apple Betty

4 cups thinly sliced apples
1/4 cup orange juice
3/4 cup all-purpose flour
1 cup white sugar
1/2 teaspoon ground cinnamon
1 pinch salt
1/2 cup butter

Directions
1.  Preheat oven to 375 degrees, Lightly grease a 9- inch pie plate with butter.
2.  Mound sliced apples in pie plate. Sprinkle with orange juice.
3.  In a medium mixing bowl combine flour, sugar, cinnamon, and salt. Mix well, then cut in butter until mixture is crumbly. Scatter over apples. You can control the sweetness by the amount of streusel topping you use.
4.  Place pie in preheated oven and bake 45 minutes. Serve warm. 

I have also made this in my Dutch Oven and it turns out great.

1&1/2 c. milk
1 package instant vanilla pudding
1/2 c. Amaretto
Mix until thickened.
Blend with one large container of Cool Whip.
Serve with fresh fruit.

Cut Glass Cream Heathertee2002 Cut Glass Cream

I remembered this wonderful Jello dessert from the 70's. If you can't find ladyfingers, sponge cake sliced thin will do fine. You also can make this in individual molds or in a single large mold, without the cakes.  Extremely pretty!

1 small package each, orange, strawberry, lime and lemon Jello
1 tub Dream Whip (large)
1/2 cup pineapple juice
2 TB sugar
2 packages ladyfingers (about 24 )

In separate little bowls, dissolve the red, orange and green Jello in 1/2 cup boiling water each. Then add 1/2 cup cold water and pour in small pans to set (should be rather shallow) in fridge.

Heat the pineapple juice to boiling, remove from heat and add the lemon Jello. Stir till dissolved, add the sugar and let cool till the consistency of syrup.
Lightly butter (or use cooking spray) a mold or a bowl and line with ladyfingers or sponge cake.
With a sharp knife, cut the colored gelatin into small cubes and diamonds. Whisk the lemon Jello mixture into the Dream Whip and fold in the cut gelatin. Pour into the mold and chill at least 2 hours, better overnight.

This makes a wonderful birthday "cake" that small children will actually eat, and no need to serve ice cream!

Yogurt Pie PRT Easy desserts for kids to make

1 graham cracker crust
1 small container Cool Whip
4 small containers yogurt - any flavor.

Fold Cool Whip into yogurt. Spoon into pie crust. Freeze for at least four hours. Put in fridge an hour before serving. Garnish any way you want.

Baileys' & Toasted Marshmallows S.D. Bailey's and marshallows

My wife is especially fond of toasting marshmallows whenever we camp. This is usually a long, drawn out process that can take about an hour to get the coal fire exactly right. On our last trip, we tried something different for fun, and dipped a marshmallow into Bailey's prior to toasting it. While it sounds kind of odd, it actually tasted quite good. Other people who were camping with us also thought it was pretty tasty. While I realize this isn't truly culinary, I thought I'd post it in case anyone's interested.

p.s. Don't try this with tequila…

Cresent rolls
Can of vanilla pudding
Can of chocolate icing

Wrap Cresent rolls around a stick (larger size give bigger hole for pudding)
bake over campfire till done and golden. Slide off stick to cool. Fill with pudding. Use a cooking syringe or baster. Spread on chocolate frosting and enjoy

Make-Your-Own Dessert Packet  JT Easy desserts for kids to make

If you're camping and cooking over an outside fire, these "make-your-own packet" desserts work well for kids OR adults! IF the group is large, or if you have limited "fire space", this is best done in two or three shifts. And, small children will need some help to assemble their packet and open it; the packets are HOT!

Prepare 10" (more or less) squares of heavy-duty foil for each packet. Put the foil squares in a stack at one end of the picnic table, then Prepare and lay out these "basics" on paper plates (use plastic spoons in a line along the table:

(Peeled) apples and fresh peaches cut into small pieces.
Brown Sugar mixed with cinnamon or "apple pie spice".
Raisins, dried cherries or cranberries.
Granola -- I use the bulk stuff with oats, nuts, etc. Make sure it's crumbled up and not "lumpy".
Butter.

Each person takes a foil square and put about 1/2 cup apples or peaches (or a combo), a sprinkling of raisins, etc., about 1 tablespoon of brown sugar, and sprinkling of cinnamon, a little butter, and a couple of tablespoons of granola mix; this last is optional.

"Drugstore fold" the packet, poke a couple of small steam holes on the top side, mark the top side with the person's initial or some identifying mark -- use a "Sharpie" -- and place on the grill over hot coals. If the fire's right, they take about 15-20 minutes or so.
I've also made these with a dollop of apricot jam, and, of course, a little vanilla ice cream -- packed in dry ice in a cooler and taken out about a half-hour before serving -- cools them off real fast!

Yield: 4 servings

      1/2 c butter
       1 c milk
       1 c bisquick
       1 c sugar
       1 cn peaches

Preheated oven to 400 degrees F.

Melt butter in baking pan. Mix milk, Bisquick and sugar and
pour into pan. Add the peaches and bake for 35 to 40 minutes.

Bisquick Cobbler WildTexan Bisquick cobbler

Can of peach filling
Bisquick
Vanilla
1 Egg
Sugar
Milk
Cinnamon
4-6 small baking or custard dishes or Dutch oven

Coat baking dishes with thin coat of oil.
Divide peach filling into dishes, one layer of peaches across bottom. Mix in bowl until smooth: 1 cup of Bisquick, 1/3 cup of milk, 1 tablespoon of sugar, 1 egg, 1/8 teaspoon of vanilla, large dash of cinnamon.
Pour batter equally over top of peaches in baking dishes. Bake at 350 degrees about 12 to 15 minutes until crust is golden brown and peaches are bubbly. Be careful not to overcook if batter layer is too thin.
For Dutch oven, double the recipe or the cobbler will be too thin and probably burn. Preheat both Dutch oven and lid on fire while preparing Bisquick mix. Prepare a small bed of coals (6 to 8, a few more in winter) on a piece of foil, shiny side up. When Dutch oven is hot, move to bed of coals. Wipe bottom of Dutch oven to remove oil residue. Pour peach filling into hot Dutch oven - should sizzle. Cover and let fruit heat while you mix batter. Pour batter directly on top of heated filling. Cover and put twice as many coals on lid as underneath. Bake as above.

Peach Trifle Jim4me Bisquick cobbler

Jelly:
1 cup (250ml) boiling water
¼ cup (55g) caster sugar
1 tablespoon gelatin
1 cup (250ml) peach nectar

Custard:

¼ cup (30g) custard powder
1/3 cup (75g) caster sugar
3 cups (750ml) milk

Almond Topping:

1 ¼ cups (100g) flaked almonds
30g butter
¼ cup (55g) caster sugar

To Assemble:

350g sponge cakes
¾ cup (180ml) dessert wine
6 medium (1 kg) peaches sliced
300ml thickened cream, whipped.

Peach Jelly: Combine water sugar and gelatin in large heatproof bowl; stir until sugar and gelatin
are dissolved; stir in nectar. Pour mixture into 20cm x 30cm pan or tin. Refrigerate about 2 hours or
until set. Chop jelly coarsely.

Custard: Blend custard powder and sugar with a little of the milk in medium pan until smooth; stir in
remaining milk. Stir over heat until mixture boils and thickens. Cover surface of custard with plastic
wrap, refrigerate until cold.

Almond Topping: Cook almonds and butter in medium shallow pan, stirring until butter is melted. Add sugar; cook stirring until sugar is dissolved and almonds are browned.
Quickly spread mixture onto baking paper lined oven tray, and let to cool.

Assembling: Cut sponges into cubes. Place half the sponge in 3.5 litre (14 cup) capacity dish. Dizzle
with half the wine, top with half peach jelly, one third of the peaches and half the custard. Repeat
layers. Top with cream, remaining peaches and Almond topping.

Peach Cobbler Travelin' Bill Easy desserts for kids to make

60 oz. canned peaches (2-30oz. cans)
1 pkg white or yellow cake mix
some ground cinnamon
1/3 stick margarine

Pour peaches, with juice, into a 12 inch Dutch oven or Skillet with lid.
Spread dry cake mix evenly over the peaches.
Sprinkle a little cinnamon over the top of dry cake mix.
Cut margarine into small slices and arrange on top.
Place in coals of campfire (or in a 350 deg. oven) covered for around 45 minutes, or until the top is crusty and browned (time and temperature isn't critical).

May be served hot but it's better if served at room temperature.
Serve with ice cream, whipped cream, or heavy cream.

Spear an unpeeled apple on a stick (Macs are best) roast over fire until it whistles and the skin cracks.  Peel with a knife and roll in brown sugar YUMMY..

Banana Boats Heathertee2002 Easy desserts for kids to make

Cut strip of skin from the inside curve of a firm banana, leaving it attached at the bottom. Scoop out about 1/4 of the banana making a lengthwise trench, and fill it with chocolate chips or pieces of Hershey bars, and marshmallows cut with scissors into quarters. Place the strip of skin over the filling and wrap in 2 layers of foil, shiny side out. Bury the boats in the coals or cook on the grill until good and hot and the chocolate and marshmallows are melted. Very messy and very good!

No Bakes yankeeblue Easy desserts for kids to make

These are my kids favorite and easy to make.

3 tablespoons unsweetened cocoa powder
2 cups white sugar
1/2 cup milk
1/2 cup butter
3 cups quick cooking oats
1/2 cup crunchy peanut butter
1 tablespoon vanilla extract
      
1 Heat cocoa, sugar, milk and butter over medium heat. Boil these verrrrry slowly (they will turn out better) when they reach the boiling point boil them for no longer than 90-120 seconds.
2 Stir together oats, peanut butter and vanilla with a big wooden spoon or Kitchen Aid. Pour the hot mix over the oatmeal mix and drop on wax paper.

Simple Easy Dessert BKJOR Simple Easy Dessert

This is a really good and easy dessert - only minutes to make.

Angel food cake slices (or pound cake)
Pina Colada Yogurt
Coconut (fresh, frozen or bagged)

All you do is put a slice of cake on the plate, a big dab of the yogurt and sprinkle with the coconut. Believe it or not, it's quite good.   You can also adapt this with other flavors of yogurt - I've used lemon yogurt and the pineapple before. All were good and the yogurt is healthier than pudding.    You can really get creative and use some of the deli flavored pound cakes like strawberry or banana and use compatible yogurt.

Zinger Fruit Cups AGBAT Zingers and a fruit cup for dessert

One lemon zinger (twinkie with lemon icing) mixed with one mixed fruit snack cup, makes a quick and delicious dessert. I prefer all pineapple fruit cups with the zinger but the mixed fruit seems to appeal to people with less of a sweet/sour taste preference.

Twinkies, ala Gran Marnier SAR Tracker New Recipe- Twinkies and ....

Let's go try this one....take Twinkies and drizzle them with Grand Marnier, then dip/coat them in melted chocolate (like dipping a strawberry).

1 cup flour
1/2 cup margarine
2 Tablespoon water

Mix flour with margarine and 2 tablespoon water as for pie crust. Divide dough in half. On un-greased cookie sheet, press (using heel of hand) into 2 - 3 inch wide strips the length of cookie sheet.

Topping

1 cup water
1/2 cup margarine
1 cup flour
3 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond extract

In sauce pan, bring to boil, 1 cup water, 1/2 cup margarine. Remove from heat and immediately add 1 cup flour. Stir till smooth. Add 3 eggs, one at a time, stirring well after each addition. Add 1/2 teaspoon vanilla and 1/2 teaspoon almond extract. Spread on top of the 2 strips. Bake 45 minutes at 350. When cool drizzle with icing.

Icing

Mix 1 tablespoon softened butter, 1 cup powder sugar, 1/2 teaspoon vanilla, add milk to spreading constancy.

Original “Nilla” Banana Pudding    

Prep: 30 minutes
Bake: 20 Minutes

¾ cup sugar, divided
1/3 cup flour
Dash salt
3 eggs separated
2 cups milk
½ teaspoon vanilla
45 Nabisco “NILLA” wafers, divided
5 ripe bananas, sliced (about 3 ½ cups), divided

Mix ½ cup sugar, flour and salt in top of double boiler, Blend in 3 egg yolks and milk. Cook, uncovered, over boiling water, stirring constantly for 10 to 12 minutes or until thickened. Remove from heat, stir in vanilla.

Reserve 10 wafers for garnish. Spread small amount of custard on bottom of 1-1/2 quart casserole, cover with layer of wafers and layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, bananas and custard to make a total of 3 layers of each, ending with custard.
Beat egg whites until soft peaks form. Gradually add remaining ¼ cup sugar., beating until stiff but not dry. Spoon on top of custard, spreading to cover entire surface and sealing well to edges.

Bake at 350 degrees F for 15 to 20 minutes or until browned. Cool slightly or refrigerate several hours until chilled. Top with reserved wafers. Makes 8 servings.

4 leftover croissants, about 6 cups cut up
2 cups half and half
2 cups heavy cream (didn't say it was low fat)
pinch salt
1 T. vanilla ( I likes lots of vanilla just pour)
6 eggs
1 cup sugar
maple syrup for topping

Preheat oven to 375 degrees F
Butter a 9 x9 inch baking dish and line it with plastic wrap going up the walls of the pan.
cut up croissants into 1 inch cubes and place on sheet pan. Toast in oven for about 10 min until crisp then place in bowl
In a saucepan, heat the half and half and cram, salt over medium heat, stirring occasionally to make sure the mixture doesn't burn or stick to the bottom of the pan. When the cram mixture reaches a fast simmer (do not let it boil) turn off the heat, add the vanilla and set aside for 10 min.
In a large mixing bowl whisk the eggs and sugar together. Whisking constantly gradually add the hot cream. Strain over the croissant cubes to remove any cooked egg pieces. Let it soak for 15 min. Stir once to coat all bread. Empty the mixture into the baking dish and let soak another 30 min. or overnight in refrigerator. Heat the oven to 350 degrees F.
Place the baking dish in a hot water bath. Bake until just set and very light golden brown on top about 25 to 30 min. Let cool and serve with warm maple syrup (and ice cream).

Its nice to get this ready and put in refrig before I leave for camping. You can bake and then refrig. Then take out and cut a serving and microwave with plastic wrap over to keep from drying out.
serve as usual.

Course toppings are up to you... there is caramel... pecan.....yum..

3/4 cup water
1 can crushed pineapple
1 small pkg. raspberry jello
1 cup cottage cheese
1 cup cool whip

Heat water and pineapple to boiling. Add Jello and dissolve, place in refrigerator until a soft jell is formed. Add cottage cheese and cool whip. Refrigerate

ORANGE COOL WHIP SALAD azrobbie jello salad

1 pt. cottage cheese
1 (3 oz.) pkg. orange Jello
1 sm. can mandarin oranges
1 sm. can crushed pineapple
1 (9 oz.) pkg. Cool whip

Mix cottage cheese and Jello. Add drained fruit and most of the Cool Whip. Mix and serve in a dessert dish or on a lettuce leaf.

1 pkg. lime jello (3 oz.)
12 lg. marshmallows
1 c. cottage cheese
1 c. hot water
2 c. crushed pineapple, drained
1 c. Cool Whip
Bring to a boil 1 cup of hot water and 1 pkg. lime Jello. Take off heat and add marshmallows and stir until melted. Cool but do not let thicken. Add cottage cheese, pineapple and Cool Whip. Add maraschino cherries (well-drained) and put into a mold and refrigerate.

1 large container cottage cheese
1 large container cool whip
1-2 envelopes strawberry instant Jello
Combine cottage cheese and cool whip. Sprinkle in Jello powder until you get color and flavor you want.
(May use any flavor Jello)
Can also add nuts, well drained pineapple or any thing else you may like. Keep refrigerated(6-8 servings)

In glass measuring cup, put about 2-3 tbsp lite cream cheese. Fill to 2 cup mark with milk. Put in blender and puree until smooth. Rinse cup. Add water to 1/2 cup mark, boil in microwave. Add 1 box of SF lemon Jello, stir. Add cold water to 1 cup mark, stir. Add skim milk to 1 1/2 cup mark. Place in blender with other mixture, blend. Add 1 box SF white chocolate instant pudding, blend, pour in to serving dishes, pie crust or tart crusts. Voila no guilt cheesecake. I put some blueberries in the dessert dishes when i put the pudding/Jello mixture in.

Next take 2 lemon instant pudding but only use 2 1/2 cups milk pour on top of cream cheese.
Take 1 container of Strawberry Cool whip GOOOOOOOOOD. Put on top.
But in refrig for 3-4 hours then service easy and wonderful.

1 large pkg instant vanilla pudding, (6 ounces)
2 1/2 cups cold milk
1 can sweetened condensed milk, (14 ounces)
1 container whipped topping, (16 ounces)

Mix pudding and milk; add condensed milk. Blend well; fold in half the whipped topping.
Alternate layers of pudding, bananas and vanilla wafers; top with remaining whipped topping and a few banana slices.

Years ago my husband's family made this with suet but have adopted this version now.

1 1/4 cup flour
1/2 each Chopped Walnuts, Dates, and Raisins
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
3/4 cup hot water
1/2 cup molasses
1 egg
2 tbsp butter melted
Combine flour, walnuts, dates, raisins, cinnamon, baking  soda, and salt. Stir in water, molasses, egg, and butter. Pour batter into greased 10c fluted tube pan or 6 cup fluted tube dish and cover completely with plastic wrap. Microwave med. power for 7-9 minutes or until pudding is set. Release plastic. Let stand cover 10 minutes. Invert on serving platter. Serve with with sauce.

Microwave Vanilla Sauce

1 cup milk, divided
1/3 cup sugar
2 tbsp cornstarch
1 tbsp butter
1 tsp. vanilla

Combine 3/4 cup milk and sugar in med. glass bowl. Cook at med 3 1/2 to 4 minutes or until sugar is dissolved. Stir at once. Blend cornstarch with remaining milk until smooth. Stir into hot mixture. Cook at med. power 2 1/2 min. or until sauce is thickened. Stir once. stir in butter and vanilla. Serve over Suet Pudding.

New Englanders of the old school never wasted anything. This is a great way to use that last cup or so of coffee that nobody wanted. his is a VERY old recipe.

1 1/2 cups cold coffee
1/2 cup sugar
1/2 cup whole milk or half-and-half
1 package plain gelatin
2 eggs, separated
1 tsp. vanilla

Soften the gelatin for 10 minutes in the milk. Dissolve the sugar in the coffee and whisk in the beaten egg yolks.
In a saucepan, bring to a boil over medium-high heat, whisking constantly. Remove from the heat and whisk in the gelatin-milk mixture. Return to medium-low heat and whisk for two minutes more.
Cool the mixture to room temperature. Beat the egg white with vanilla til it holds stiff glossy peaks. Fold gently and thoroughly into the coffee mixture. Pour into little molds or dessert dishes and chill.
There will be a thin clear dark-coffee layer on the bottom, then a creamy cafe-au-lait layer, then a fluffy top. Very refreshing on a hot day. Good with a dusting of cocoa powder on top

I acquired this recipe a few years ago and it's enough to make me drool just reading it and passing it on. Comments in the recipe are courtesy of the person I received the recipe from.

Created by Antoine Careme for Czar Alexander I, this dish is probably more French than Russian, but it appears in the cookbooks of both countries. If possible, choose medium-size strawberries for this dish instead of the huge ones. If they are very big, you might consider cutting them into pieces.

[to serve 4]

1 quart strawberries, washed and hulled
juice of 2 oranges (3/4 cup)
1/2 cup Cointreau or other orange-based liqueur
1 1/2 cups heavy cream, chilled
1/4 cup sugar
Vanilla

Put the strawberries in a bowl and add the orange juice and the Cointreau. Let them macerate for about an hour. Beat the cream in a cold bowl, gradually folding in the sugar and a few drops of vanilla.

Spoon the whipped cream over the strawberries and serve at once.

Note: You may have first experienced this dish as I did -- with the berries stirred into a mixture of whipped cream and soft vanilla ice cream. So far as I can determine, this is strictly an American creation. But I don't think the Russians, with their passion for ice cream, would wholly disapprove. Prepare the same amount of strawberries and macerate them in orange juice and Cointreau as directed above. Let 1 pint vanilla ice cream soften just enough to be stir able. Whip 1 cup of chilled heavy cream in an ice-cold bowl until stiff, and fold it into the ice cream. Gently blend in the macerated strawberries and serve at once. 20041004

I am making a patch right now, this will make about 3-4 dozen, depending on how thick and how large you make them.

We do not fill as I stated earlier, we shake in bag of powder sugar, eat them fresh when they taste the best! Warm in microwave for 15 sec to get back that just made flavor! Best with a tall glass of cold milk.

This is a recipe I use for pot lucks, and family get-togethers. Nobody ever gets enough. It's like an flat, open faced Éclair. you can also make the crust a day or two ahead of time and make the filling at the last minute.

Ingredients:

1/2 c. butter
1 c. cold water
1 c. flour
1/4 tsp salt
4 eggs
2 small boxes instant vanilla pudding
1 block cream cheese
2 c. milk
1 tub Cool Whip (regular size)
chocolate syrup


Directions:
In medium saucepan melt butter.   Add water, bring to a boil, add flour all at once, stir.   Cook till mixture forms a ball that doesn't separate.   Remove from the heat and cool five minutes.   Add one egg at a time, beat with wooden spoon till smooth between each egg.   Spread batter thinly onto a greased cookie sheet.   Bake at 400 for 30 minutes or till golden brown.   Cool.   When cold, mix the two boxes of pudding, cream cheese and the two cups milk with electric mixer till smooth.   Spread over cooled crust, top with Cool Whip and drizzle with choc syrup

Banana Pudding:
1/2 cup milk, plus 2 cups
1/3 cup sugar plus 3 tablespoons
2 large eggs
1 large egg yolk
1/4 cup cornstarch
1 tablespoon unsalted butter
2 teaspoons pure vanilla extract
4 firm, ripe bananas

Napoleon Layers:
3 egg whites
1/2 cup plus 1 tablespoon sugar
3 ounces butter, melted
1/2 teaspoon vanilla extract
1/2 cup plus 1 tablespoon flour

For the Pudding: In a small bowl, whisk together 1/2 cup milk, 1/3 cup sugar, eggs, egg yolk and cornstarch. In a medium saucepan, bring 2 cups milk and 3 tablespoons sugar almost to a boil. Whisk in other ingredients. Bring to a low boil. Whisk constantly until thickened and smooth, about 2 minutes. Remove pan from heat. Strain custard and whisk in vanilla. Place 2 bananas in food processor and pulse until cut into small pieces. Fold this into custard and refrigerate.

For the Napoleon Layers: Preheat oven to 350 degrees F. Whisk egg whites with sugar. Stir in melted butter and vanilla extract. Fold in flour. On a parchment lined sheet pan, spread 1 tablespoon of mixture thinly into a 4-inch diameter circle (like a thin cookie). Repeat until there is no more batter. Bake in the oven until light brown, about 5 minutes. For each serving, use 3 "cookies". Slice thin remaining bananas on bias. On each plate, place 1 cookie, followed by 2 slices of bananas, 1 1/2 tablespoons of banana custard. Repeat and then top with remaining cookie. Garnish with powdered sugar and mint leaves.

We love to make these and give them out to the folks at the campsites around us!!!!

Take tubes of Pillsbury biscuits ($.30-$.99) and heat up a small pot or pan of cooking oil over the campfire. If you do this right you can pour the cooled oil back into the bottle and reuse many times.

Drop the Pillsburry biscuits into the hot oil one at a time, depending on the heat you flip in 1 minute or so onto other side. In another minute scoop out with straining ladle into tupperware container of cinnamon-sugar.

In just a few minutes you can make dozens of hot delicious doughnuts.

We learned this trick from a local China Buffet that has doughnuts - we saw the owner pushing a grocery cart with cases of the Pillsbury tubes up to the register.

All that is needed.

-Tube of Pillsbury Biscuit dough
-Small pot or deep frying pan.
-Bottle of cooking oil (remember to let cool and reuse)

Buy the cheap small biscuits and put small holes in them using biscuit cutter or whatever you can find. Heat up oil over stove and drop biscuits in till lightly brown and turn. Cook up the holes too. Cover donuts in cinnamon/sugar mixture or powdered sugar.

Makes for a late night snack or morning treat.

Make the dough a lot thinner than you think you should, on the final roll-out, as it will puff up more than you expect.

2 C Flour
1/4 tsp Salt
4 Eggs
1/2 tsp Vanilla
Oil for frying
1 C Honey
1 Tbsp Sugar
Nonpareils (candied sprinkles) or candied fruit

Mix first 4 ingred. to make a soft dough
Turn out on lightly floured surface
Kneed and divide dough in half
Lightly roll each half to 1/4" thickness to form a rectangle
Cut dough into strips 1/4" wide
Roll each strip with palms of hands to pencil thickness
Cut into pieces/nuggets 1/4" to 1/2" long
Fry in oil a few at a time for 3-5 minutes, drain on paper (avoid excess flour in oil as it will foam!)

Cook honey and sugar over low heat until sugar dissolves

In large bowl, combine fried dough and honey mixture stirring to coat well
Sprinkle with nonpareils or, if you prefer, candied fruit
Pile into a mound on a serving platter
Refrigerate until set

1 Cup cake flour                                
½ cup milk
1 ¼ teaspoon baking powder
2 ½ cups fruit
½ teaspoon salt
2 cups sugar
1 stick butter

Sift flour, baking powder, and salt into 1 cup sugar and milk. Mix and pour into buttered heavy iron skillet or pan. Melt butter, adding 1 cup sugar and fruit with any juice. Pour over first mixture. Bake ½ hour at 350° until brown.

EASY FRUIT COBBLER pawneedan Peach Cobbler

8 tbs. butter or margarine
1 cup sugar
1 cup all-purpose flour
2 tsp baking powder
1 cup milk
1 can (46 oz) sliced peaches, un-drained*

Preheat oven to 350 degrees.
Melt butter in a 2 quart baking dish and set aside.
In a mixing bowl, by hand, mix sugar, flour and baking powder.
Add milk. Mixture will be thin.
Pour over melted butter.
Pour fruit over this and do not stir.
Bake 40 to 45 minutes, until top is lightly browned.
Dough will rise to the top during cooking.

* Other fruits may be substituted for peaches.

2 cups unsalted peanuts (salted works too)
1 (8-oz) container frozen whipped topping, thawed

1. In a med. saucepan combine the flour, sugar, egg yolk, vinegar and reserved pineapple juice. Cook over med. heat until thick. Remove from heat and chill.
2. In a large bowl combine the pineapple, apples, peanuts and chilled cooked mixture. Fold in whipped topping and chill for at least 1 hour before serving.

My recipe calls for 8 egg yolks, 3/4 cup of fine sifted sugar. 2 pints of whipping creme a pinch of salt and a vanilla bean.

Chocolate Fondue Heathertee2002 Fondue--

I've made a chocolate fondue that was a smash hit as a dessert following a backyard bash I gave years back. You dip all sorts of good things in melted chocolate: Big strawberries with the stems on, chunks of fresh pineapple, marshmallows, chunks of Snickers bars, pretzels, etc. Whatever you like. I had melted milk and dark chocolate, and side dishes of sour cream, chopped nuts, shredded coconut, and Jimmies. Very good-quality white chocolate (such as Lindt) would be good too.
Too high heat or too much juice on the fruit will seize the chocolate, so be sure the fruit is pretty dry and your heat as low as it'll go, or just melt the chocolate and keep it warm over hot water.

 
BROWN SUGAR BAKED APPLES tinypaws Apples!

Golden Delicious apples are used for this starter, but Rome Beauties work well, too.
8 large Golden Delicious apples
1/2 cup (packed) dark brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
6 tablespoons pure maple syrup
4 tablespoons (1/2 stick) unsalted butter, cut into small pieces

1 cup water
Chilled whipping cream (optional)

Peel skin off top quarter of each apple. Using melon baler, scoop out core, leaving bottom intact. Stand apples in 13x9x2-inch baking pan. Mix sugar and spices in bowl. Reserve 2 tablespoons mixture. Fill apple cavities with remaining sugar mixture. Spoon 1/2 tablespoon maple syrup into each cavity. Scatter 3 tablespoons butter pieces over apples. (Can be made 4 hours ahead. Cover; chill.)

Preheat oven to 350°F. Pour 1/2 cup water into pan with apples. Bake apples 35 minutes. Add reserved 2 tablespoons sugar mixture, 2 tablespoons maple syrup, 1 tablespoon butter, and 1/2 cup water to pan. Bake until apples are tender when pierced with skewer, about 25 minutes longer. Transfer apples to 8 bowls. Place baking pan atop 2 burners; boil over medium-high heat until syrupy, about 2 minutes. Spoon sauce over apples. Serve with whipping cream, if desired.

Makes 8 servings.

Peel open, but don't remove the skin of a ripe banana. Remove a wedge down the length of the banana, put in chocolate chips and again caramel topping. Pull skin back, wrap in foil and cook till warmed through.

For dessert, core out apples, (bigger holes = more filling) add in raisins and caramel topping (like used on ice cream). I think you put a pat of butter on this too. Wrap in foil and cook till tender.
Red Hot Candy Apples 2 campers Peach Cobbler

Core 1 apple (per person) while leaving it whole. Place 1 tsp sugar, 1 tsp butter, and 5 or 6 red-hots candy in the hole of the apple. Wrap in foil. Place wrapped apple into hot coals and cook until apple is done. Baking time varies with the variety of the apple but is usually 10-15 minutes. Apple may be tested for doneness by poking it with a fork. You will enjoy this one.

 
Chocolate Truffle PRT Chocolate Truffle

1 chocolate cake mix
3 boxes instant chocolate pudding mix - plus the necessary milk
2 12 oz. containers of Cool Whip
1 package Bits O' Brickle (or find bar peanut brittle and beat it into submission!)
 
Bake cake according to package directions in 13" x 9" pan
Let cake cool. When almost cool, poke holes in the surface with a fork and drizzle Kahlua over the cake.
Make the pudding.

Score the cake into thirds. Cut each part into one inch squares.
In a nice glass bowl, layer cake, pudding, Cool Whip and brickle bits. You should end up with three layers.

Chill, serve, and watch people gain weight!

If you are serving children, skip the Kahlua and substitute M&Ms for the brickle.
Or you can put chocolate shavings instead of either candy.
Or you can use Bailey's instead of Kahlua.
Or rum. Be inventive.

Apple Empanadas Mr_Pace Apples!

For something delicious and a little different make some empanadas. Very similar to apple turnovers. The easiest way for "Gringos" to make them is to use pie dough. Roll out to less than 1/8" thick into 6" circles. Fill with chunky cinnamon applesauce mixed with lots of raisins and chopped nuts (walnuts, pecans, pinions). Fold in half and crimp the edges and deep fry until brown.

They freeze well and reheat in the micro. Great with coffee in the mornings and not as fattening as donuts or apple fritters.

Banana's Torched Bad Influence Craving Bananas Foster

Just to add to these fantastic recipes - here's my favorite with a very simple ingredient list:

Bananas
Granulated Sugar (about two tablespoons per naner)
Ice Cream (whatever fits, last night we used peanut butter, I've used mocha almond fudge, vanilla, whatever!)

Split the bananas down the middle, then cut crosswise for four flat pieces. Place cut side up on a grill or cooling rack over a cookie sheet and coat top with sugar (about 1/4" thick).

Take out your trusty kitchen torch (either use a little butane torch carefully, or better yet use one of those plumbing torches from the hardware store, the kind that fits on those portable propane cans). Just use the middle of the flame and go back and forth until the sugar melts and starts to brown.

Lay out on a plate and add ice cream! It's got a lot of the flavor of the fosters (the caramelizing almost adds the flavor of the alcohol) with many fewer ingredients, plus its got nice crispy shell that is fun to break up.

Banana's Foster ala Brennan's New Oleans ccxnola Craving Bananas Foster

? ¼ cup (½ stick) butter
? 1 cup brown sugar
? ½ teaspoon cinnamon
? ¼ cup banana liqueur
? 4 bananas, cut in half lengthwise, then halved
? ¼ cup dark rum
? 4 scoops vanilla ice cream
Combine the butter, sugar, and cinnamon in a flambé pan or skillet. Place the pan over low heat either on an alcohol burner or on top of the stove, and cook, stirring, until the sugar dissolves. Stir in the banana liqueur, then place the bananas in the pan. When the banana sections soften and begin to brown, carefully add the rum. Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum. When the flames subside, lift the bananas out of the pan and place four pieces over each portion of ice cream. Generously spoon warm sauce over the top of the ice cream and serve immediately.

BANANAS FOSTER, FLAMBÉ robinandbob Craving Bananas Foster

A quintessential New Orleans dessert, and a favorite among most locals.

4 tbsp. butter (1/2 stick)
1 cup dark brown sugar
2 bananas
2 oz. banana liqueur
4 oz. dark rum
Ground cinnamon
Vanilla ice cream (optional)

This dish cannot be prepared in the kitchen. It must be performed, in front of your guests. Use a chafing dish, and some kind of portable heat like Sterno. Don't be sloppy, and keep a fire extinguisher handy. There's no need to burn the house down just for dessert, but this really must be done right. I learned to cook this dish from Chef Joe Cahn at the New Orleans School of Cooking, and he spun dire tales of what befell those who dared sequester themselves in the kitchen when making Bananas Foster. Seriously, bad gris-gris will befall you if you deprive your guests of the spectacle. Plus, they'll talk for years about how cool you are to have made this for their dessert.
First, you should make some preparations. Peel a thin strip of peel from the bananas, and use your knife to slice the banana crossways into coins. Then replace the banana peel so that it looks untouched (as best as you can, anyway). This way, you can pretend to "peel" your bananas, and dump them into the put already cut, as if by magic. Cheesy, you ask? Well, it still looks cool, particularly if you're really nonchalant when you do this in front of your guests. If you insist, you can slice the bananas the classical way, quartering them by slicing thm lengthwise and then in half. I still think the other way is cooler.

Put your ground cinnamon into some kind of non-standard container, or even a little muslin bag, the better to "convince" your guests that it is, in fact, not cinnamon but voodoo dust, scraped from the tomb of Marie Laveau at midnight on All Soul's Day ... some kind of delightfully corny******like that. Also, I recommend taking a cinnamon stick and grinding it fresh in a spice or coffee grinder instead of using pre-ground cinnamon. Sieve the result through a tea ball strainer to remove the larger pieces which won't grind finely. This will maximize the fresh, aromatic cinnamon flavor. If you use your coffee grinder, it'll also make your coffee taste great.

Now, to business ...

Melt the butter and add the brown sugar to form a creamy paste. Let this mixture caramelize over the heat for about 5 minutes. Stir in the banana liqueur and rum. Heat until the liquor is warmed, about three minutes. Add the bananas, cook for about 1 - 2 minutes, then ignite with a flourish. Here's the best way to do this:

Using a long, bent-handled ladle, scoop up some of the warm liquor. Hold it a foot or two above the chafing dish and ignite the liquor in the ladle. VERY CAREFULLY, pour the liquor into the dish. A column of flame will descend from the ladle into the dish, which will ignite with a marvelous *poof*! Keep a water pale nearby, subtly wielding a fire extinguisher. Try not to become a human torch in the process.

Craving Bananas Foster

I made this for my Camping club while staying at Pismo Beach on a warm summer night.......there were about 35 people and they were happy, happy, happy!!

4 teaspoons brown sugar
2 teaspoons butter
2 whole peeled and sliced bananas
2 tablespoons banana liqueur
2 scoops vanilla ice cream
2 tablespoons chocolate syrup
4 tablespoons whipped cream

In a large saucepan over medium heat, melt the Brown sugar until it becomes liquid. Add the butter and the sliced banana. Cook for about 6 minutes. Remove the pan from the heat and then add the banana liqueur. Put the pan back in the heat, it will flambé, Continue to cook for about 2 minutes. Remove the pan from the heat and start spooning the flambéed banana over the Vanilla ice cream in a glass. Add the chocolate syrup and the whipped cream. Enjoy!

Grilled Pineapple Sol Camping Deserts......

3/4 cup tequila
3/4 cup light brown sugar, packed
1 1/2 tsp. vanilla
1/4 tsp. ground cinnamon
1 large pineapple, peeled, cored & cubed (or use canned)
6 bamboo skewers, soaked in water for 30 min.

Stir first 4 ingredients in a small bowl, til sugar dissolves. Thread pineapple pieces on skewers. Tequila mixture & skewers can be made up ahead of time (up to 8 hrs.; cover separately & chill). Prepare barbecue (medium heat). Grill pineapple until browned, basting with tequila mixture, turn occasionally. Serve hot or warm, over ice cream and/or pound cake cubed.

Easy, fruity dessert...
Halve the peaches, and pit them
Put them cut side down on a hot grill that has been sprayed with Pam. Cook about 6-8 minutes.
Turn over with tongs. Brush with melted butter.
Grill 2-3 minutes.
Put in a dish, scoop vanilla ice cream over and serve with fresh strawberry sauce made with strawberries mixed with a little sugar.

Fried Apples over the Fire vetteldy76 Apples!

4 large Braeburn apples or similar sweet apple
1 Cup Splenda or more to taste
tablespoon cinnamon
2 sticks of butter
teaspoon of vanilla
Baking crumbs

Slice apples thin. Start a nice fire and put a grill top on it. Set a cast iron skillet on the grill to heat. Place butter in the skillet to melt. Pour apples into skillet and add Splenda, vanilla, baking crumbs and cinnamon. Stir continually until all ingredients are melted together and apples are soft and gooey. Get a bowl, scoop some of the hot apple mixture into the bowl and top with your favorite vanilla ice cream.

Typically, Southern cooking is a little sweet for some, so adjust the sugar to taste. Or add lemon juice for tartness. And almond extract for an added fillip. The sugar content of fresh peaches is all over the map, so this recipe will be different every time.

Prep: 15 min, Cook: 25 min.
a.. 2 lbs. peaches, sliced
b.. 1 Tbs. plus 1 tsp. water
c.. 3-1/2 Tbs. sugar
d.. 3/4 tsp. ground cinnamon
e.. 2/3 cup buttermilk baking mix
f.. 2 tsp. sugar
g.. 2 tsp. unsalted butter, melted
h.. 2 Tbs. plus 2 tsp. milk

Preheat oven to 425°F. Place peach slices close together in a greased 10x6 inch or 9x9 inch square pan. Sprinkle with water, sugar and cinnamon. Bake 20 minutes while preparing topping. Combine remaining ingredients in a bowl and mix to form a soft dough. Gently smooth dough into a ball on a floured cloth-covered board. Knead dough 8-10 times. Roll
dough into a 10x6 inch rectangle and place over hot peaches. Cut several small crisscrosses in dough. Bake 20-25 minutes.

1 cup sugar
3/4 cup flour
1/2 stick butter
1 can peaches (drained)
cinnamon

Mix egg, sugar, and flour together until real crumbly. Put slices of
butter on the bottom of the baking pan, sprinkle with cinnamon. Add
drained can peaches. Then sprinkle the flour, egg, and sugar mixture
over top. Bake about 20 minutes in a medium oven or until mixture is
light brown. Serve warm with whipped cream on top.

1/3 c. sugar
Dab of butter on each peach
1/2 c. water
1 c. flour
1 c. sugar
1/2 tsp. salt

1 tsp. baking powder
1 egg

Place peach halves in 6 1/2 x 10 1/2 inch baking pan, butter on each half. Pour 1/3 cup sugar over peaches, then pour water over all. Mix dry ingredients and cut in unbeaten egg with a knife and sprinkle over peaches. Bake at 350 degrees for 30 minutes.

Apple Pan Dowdy Woodman Apples!

One of my Grandmothers Favorites

Crust
1 1/2 cups of sifted all- purpose flour
½ tsp. Salt
½ cup vegetable shortening
3-4 tbs. Cold water

Filling
1 tsp. Cinnamon
¼ tsp. Nutmeg
¼ tsp. Cloves
¼ tsp. salt
9 medium apples, peeled, cored and cut into ½ “ slices
½ cup light molasses
4 tbs. Butter
1 cup heavy cream, whipped, or vanilla ice cream

For the crust, sift the flour and salt into a bowl. Cut in the shortening with a pastry blender or two knives until the mixture resembles cornmeal. Add only enough cold water to hold the dough together, Form the dough into a ball, wrap et in wax paper, and chill one hour.

The filling mix the spices and salt in a large bowl. Add the apples slices and toss to coat with the spices. Place the apples in a buttered 13x9x2 baking dish and pour molasses over apples and dot with butter.

Roll out the pastry to a 13x9 rectangle and place on top of the apples. Bake at 400 for 10 minutes, Reduce the heat to 325 and bake 30 minutes more. Break the crust with a spoon and push a few of the sections down into the apples, Serve warm with unsweetened whipped cream or Vanilla ice cream. Makes 6-8 servings

Easy Apple Dumplings TexasShadow Easy Apple Dumplings

2 cans of crescent rolls (8 in each)
2 Granny Smith Apples - each peeled & cored into 8 slices

2 sticks of real butter melted with
2 cups of sugar or 2 Cups Splenda

1 can of Sprite or diet Sprite (or Pepsi or coke)
Sprinkle cinnamon

1 apple slice per triangle - wrap and place in sprayed pan
Pour butter & sugar over apples
Then pour Sprite over all ingredients
Sprinkle with cinnamon

Bake at 300 degrees for 45 minutes. Then, turn off oven and leave
dumplings for another 15 minutes. Remove & enjoy!

You could easily cut this recipe in half for just two people.

1 TEASPOON CINNAMON
1 CAN MT DEW

WRAP EACH APPLE QUARTER IN PIECE OF BISCUIT
COMBINE THE NEXT 5 INGREDIENTS AND BRING TO BOIL

IN A 9X13 PAN PUT THE WRAPPED APPLE THEN POUR THE MT. DEW, BUTTER MIXTURE OVER THEM AND BAKE ON 375 DEGREES FOR 540-50 MINUTES. THESE ARE DELICIOUS
